Old recipe salad This recipe was found in a cookbook for 1904. For components it is not too familiar to us like Olivier

  • 2 fillets grouse
  • 1 veal tongue
  • 1 onion
  • 1 carrot
  • 1 celery root
  • 1 bay leaf, 3 peppercorns
  • 100 g of pickles (pickled small vegetables)
  • 25 cancers
  • 125g canned soy sprouts
  • 2 fresh cucumbers
  • 100 grams of capers
  • 5 eggs
  • 1 head of lettuce, and 100 g of caviar
  • For the sauce: 2 eggs, 400 ml of olive oil, 1 tbsp wine vinegar

Language boil for 2 hours, adding peeled carrots, onions, celery, bay leaf and pepper. Tongue clean, vystudit in broth and cut into cubes. Fillet grouse salt and pepper and fry in olive oil for 4min on each side, also cut into cubes. Crawfish boil for 7 minutes in salted water, peel and cut into strips. Hard-boiled eggs finely chopped. Cucumbers and pickles cut into small cubes. Mix all the above ingredients, add soy and capers, stir and season sauce. To prepare the sauce, whisk the eggs with olive oil and wine vinegar. Serve this salad on lettuce leaves and garnish with caviar.
